She developed the perfect vegan pancake recipe: simple enough to whip up on a busy weekday morning, but just decadent enough to make a perfect weekend treat. The secret ingredient to these vegan pancake's rich plant-based texture? Our Plant-Based Creamer, made with the brain-boosting properties of MCT oil! Here's what Thamara has to say about her recipe:

These classic pancakes are made with @picnikshop Plant-Based creamer - a vegan creamer made with cashews, coconut, and MCT oil - all the healthy fats you need to boost your energy!"
fluffy vegan pancakes
- 1 cup spelt flour - oat flour for gluten-free
- 1 cup Plant-Based Creamer
- 1 ripe banana, mashed
- 1 tbsp baking powder
- 1 tbsp apple cider vinegar
- 1 tsp vanilla
- Pinch salt
- 1/2 tsp cinnamon (optional)
Combine creamer and apple cider vinegar- let it sit for a minute. Then add mashed bananas and vanilla.
Combine dry ingredients. Stir wet ingredients to dry and mix well. Heat a skillet on medium-low with cooking spray (or 1 tsp coconut oil). Pour 1/3 cup of pancake batter and cook for for 2-3 minutes then flip and cook for 1 minute or until golden brown.
Serve with your choice of toppings: coconut yogurt, blueberries, bananas, and maple syrup or honey!
