SOUR CREAM + ONION DIP
(low carb + keto-friendly)
- 1 red onion
- 2 tbsp butter
- 3 garlic cloves
- 1/4 cup Keto Picnik Creamer
- 3/4 cup sour cream
- 1 green onion
- 2 sprig thyme
- 1 tsp sea salt (to taste)
- 1/2 tsp black pepper (to taste)
- Juice of 1/2 lemon (to taste)
- cooked + chopped bacon (optional)
Rough chop red onions into large (but thin) pieces. Heat butter on medium heat on stove and add onions. Sweat with salt and let cook for 2-3 minutes. Turn stove on low. Stir onions every 2-3 minutes until caramelized (roughly 45 minutes). If pan runs dry, add a splash of water at a time to keep onions cooking (without burning).
Once onions are nearly finished, add 3 garlic cloves, finely minced, and cook until fragrant.
Remove from heat and let cool.
Once cooked, rough chop onion mixture with a knife and add to a bowl.
To the bowl, add sour cream, Picnik Creamer
, salt, pepper, thyme leaves from the sprigs and finely chopped green onion (all of the white part and some of the green, but reserving some green onion for garnish). If you are adding bacon, add it now as well. Stir dip to combine all ingredients.
Mix well and garnish with cracked black pepper, green onion (or chive) and chopped bacon.
