CHOCOLATE KETO FUDGESICLES
MAKES 5 POPSICLES (roughly 3.5oz total popsicle batter)
- 1/4 CUP RICH COCOA POWDER (we used DROSTE)
- 1/2 CUP LAKANTO MONKFRUIT 1-for-1 SUGAR (you could use any granulated sugar of your choice, but all sugars/sugar substitutes will result in different levels of sweetness)
- 1 SMALL AVOCADO, RIPE
- 1 CUP ORIGINAL KETO PICNIK CREAMER
- 1 TSP VANILLA EXTRACT
Combine creamer and monkfruit together and heat on the stove until all sugar is dissolved. Remove from heat and let cool.
In a food processor, combine avocado, cocoa, the creamer + monkfruit combo and vanilla extract. Blend until smooth.
Transfer batter to a popsicle mold and freeze overnight.
Enjoy immediately after removing from the freezer or let thaw on the counter for 10 minutes before consuming for ultra-creamy texture.
