Keto Angel Food Cake Recipe with berries

  • 12 egg whites
  • 3/4 cup almond flour
  • 1/4 cup tapioca starch
  • 2 tsp cream of tartar
  • 1/4 tsp salt
  • 1 cup confectioners Swerve
  • 1 1/2 tsp pure vanilla extract
  • 1/2 tsp almond extract

Preheat oven to 325°F. Combine almond flour, salt and tapioca starch and set aside. Beat egg whites in a mixer on high speed until frothy.  Add cream of tarter until mixed, then add confectioners Swerve and extracts. Continue beating until you can see firm peaks. Fold in the dry ingredients a little at a time until well mixed, and pour batter into an un-greased angel food pan. Level out the top. Bake for 40 minutes until golden brown, remove pan from oven, and immediately turn upside down on a cooling rack. After the cake is cooled, run a butter knife around outer and inner edge of the pan.

Mash strawberries in a bowl with a fork. Combine with Picnik creamer in a saucepan and whisk until the sauce comes a boil. Add confectioners Swerve and whisk until everything starts to thicken. Remove from the burner and transfer to a bowl. Refrigerate until it starts to set a bit. Sauce should be relatively thick.

  • 1/2 cup blueberries
  • 1 –2 cup(s) heavy cream, whipped

BUILD IT UP!

Pull off pieces of angel food cake and add to the bottom of a glass. Add a layer of whipped cream, then blueberries, more cake, strawberry cream, and repeat. Repeat these layers until you reach the top! Top dish with whipped cream and extra strawberries and/or blueberries in the design of your choice.
