buttermilk:
- 1 cup Picnik Keto Creamer
- 1 tbsp white vinegar or lemon juice
Combine creamer and vinegar/lemon juice and set aside.
streusel topping:
- ½ cup coconut sugar
- 1 tbsp butter, softened to room temp
- 2 tsp cinnamon
cake ingredients
- 2 ½ cups gluten-free flour (we love Bob's Red Mill!)
- 2 tsp cinnamon
- ¾ tsp baking soda
- ¾ tsp baking powder
- ½ tsp salt
- 1 cup coconut sugar
- 1 egg
- 1 cup “buttermilk”
- ⅓ cup butter, melted
- 1 tsp vanilla extract
- 2 medium tart apples, peeled and chopped into 1 inch pieces
baking instructions
Preheat oven to 350°F. Grease or line 12 serving muffin tin and fiill each muffin cup to about 3/4 full. Evenly sprinkle streusel topping over each muffin. Bake for 20 minutes, or until a toothpick inserted in the center comes out clean. Let rest of about 5 minutes in muffin pan and remove to a wire rack to cool completely. Enjoy!
