Combine creamer and vinegar/lemon juice and set aside.

    streusel topping:

    • ½ cup coconut sugar
    • 1 tbsp butter, softened to room temp
    • 2 tsp cinnamon
    Mix strudel ingredients together in a small bowl with a fork and set aside.

    • 2 ½ cups gluten-free flour (we love Bob's Red Mill!
    • 2 tsp cinnamon
    • ¾ tsp baking soda
    • ¾ tsp baking powder
    • ½ tsp salt
    • 1 cup coconut sugar
    • 1 egg
    • 1 cup “buttermilk”
    • ⅓ cup butter, melted 
    • 1 tsp vanilla extract
    • 2 medium tart apples, peeled and chopped into 1 inch pieces
    In a small bowl whisk together flour, cinnamon, baking soda, baking powder, and salt. In a large bowl whisk together coconut sugar, egg, Picnik Creamer buttermilk, butter, and vanilla. To the wet mixture, add chopped apples and stir to coat. Add reserved flour mixture and gently stir until completely combined.

    baking instructions

    Preheat oven to 350°F. Grease or line 12 serving muffin tin and fiill each muffin cup to about 3/4 full. Evenly sprinkle streusel topping over each muffin. Bake for 20 minutes, or until a toothpick inserted in the center comes out clean. Let rest of about 5 minutes in muffin pan and remove to a wire rack to cool completely. Enjoy!
